Waffles or pancakes. It’s such an epic contrast of styles. Of course, I love blueberry pancakes! Who doesn’t? But it’s also so hard to resist the idea of blueberry waffles.

Why? Why do we like waffles so much? Because with waffles you get a crispier crust and those waffle pockets give opportunities for the sugar in the batter to caramelize. We don’t get that as much with pancakes.

Sometimes a waffle is exactly what you’re looking for. Imagine a nice, big stack of blueberry waffles topped with blueberry sauce. It’s perfect!

How to Make Blueberry Waffles

So, let’s talk about how to make this blueberry waffles recipe. It’s really quite simple.

  1. Stir together dry ingredients from the flour to the baking powder
  2. Mix together wet ingredients from the plant-based milk to the vanilla
  3. Stir the two together until combined

  • Chia — We’ll add some ground chia seeds to create a thicker texture. You can use whole chia seeds; I just prefer ground because it creates a smoother finished texture.
  • Syrup — I used maple syrup, but you can substitute agave nectar.
  • Milk — We’ll use almond milk for the best overnight oats! Substitute your favorite plant-based milk.
  • Yogurt — I love adding some plant-based yogurt (plain, unsweetened) for an even more tangy flavor.
  • Protein Powder — I add some vanilla protein powder for increased flavor and nutrients. If your protein powder is not sweetened, you may want to add an extra teaspoon or two of sweetener.
  • Cornstarch — We’ll use cornstarch to thicken the lemon curd topping.
  • Turmeric — A pinch of turmeric makes that lemon curd sunny yellow.
  • Flour — I use all-purpose flour, but you can substitute whole wheat pastry flour (different than whole wheat flour).
  • Plant-based milk — I use mostly soy milk. You can substitute any plant-based milk such as almond milk.
  • Ground flaxseed — Ground flaxseed is a great egg replacer, or you can use a chia egg instead.
  • Apple cider vinegar — It’s the combination of plant-based milk with vinegar that makes vegan buttermilk. And that is my favorite trick for fluffy waffles!

Quick Fix Tip

Use frozen blueberries for these waffles to keep things simple. Besides, frozen blueberries work best because they don’t burst into the batter as easily.

This is a vegan waffle recipe, but you won’t miss the eggs, dairy, or butter. We’re using ground flax as an egg replacer, and it works great. Dairy-free waffles are just as good!

Marly’s Tips

Here are some great tips to help you make these homemade blueberry waffles perfect every time:

  • Because vegan butter comes salted, there’s no need for additional salt to be added to the batter.
  • The batter may thicken up as it sits, if so, feel free to add more plant-based milk or another tablespoon of melted vegan butter. Thinner batter will create crispier waffles.
  • I like to use a 1/2 cup measuring cup to dispense batter evenly into the waffle iron.
  • Use the back of a measuring cup or spoon to gently press the batter around, making sure every section of the waffle iron is filled.
  • I love the combination of all-purpose and whole wheat flour in this recipe, however, you can use only all-purpose flour or even whole wheat pastry flour if you prefer.
  • If you have a Belgium waffle maker, you can use this batter to make blueberry Belgium waffles.
  • Fruit waffles are delicious, so feel free to substitute your favorite berries, such as raspberries or even a mixture of berries.

  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 ¾ cups plant-based milk
  • 1 tablespoon ground flaxseed
  • 1 teaspoon apple cider vinegar
  • 4 tablespoons vegan butter melted
  • 1 teaspoon vanilla extract

  • Plug in your waffle iron so that it can begin to heat up. Preheat oven to 300°F or heat up a toaster oven to keep prepared waffles warm.
  • In a mixing bowl, combine the flours, sugar, and baking powder. Stir to combine.
  • In a separate bowl, combine the milk, ground flax, apple cider vinegar, melted butter, and vanilla. Stir to combine.
  • Pour the milk mixture into the flour mixture and stir until everything is incorporated. Add frozen blueberries and stir gently to incorporate.
  • Spray your waffle iron with vegetable cooking spray. Use a spoon or 1/2 cup measuring cup to dispense batter into waffle iron. Use the back of the spoon or measuring cup to make sure every section of the waffle iron is filled, spreading the batter to the edges. Close the lid and cook the waffles for 5–7 minutes, until golden and crispy.
  • Transfer cooked waffles to a pan in the heated oven to stay warm and continue making waffles until the batter is gone.
  • Serve warm with vegan butter, peanut butter, jam, maple syrup or your favorite toppings.
