Vegan Teriyaki Bowl

This vegan teriyaki bowl recipe combines sweet, garlicky vegan chicken served with brown rice or cauliflower rice, steamed broccoli, and lots of healthy veggies. It comes together in around 20 minutes and is better than takeout! For a change of pace, serve it with this vegan peanut sauce.

  • Lemon — We’ll use both the zest and the juice of the lemon.
  • Oats — I used rolled oats for this recipe, but you can substitute instant oats.
  • Chia — We’ll add some ground chia seeds to create a thicker texture. You can use whole chia seeds; I just prefer ground because it creates a smoother finished texture.
  • Syrup — I used maple syrup, but you can substitute agave nectar.
  • Milk — We’ll use almond milk for the best overnight oats! Substitute your favorite plant-based milk.
  • Yogurt — I love adding some plant-based yogurt (plain, unsweetened) for an even more tangy flavor.
  • Protein Powder — I add some vanilla protein powder for increased flavor and nutrients. If your protein powder is not sweetened, you may want to add an extra teaspoon or two of sweetener.
  • Cornstarch — We’ll use cornstarch to thicken the lemon curd topping.
  • Turmeric — A pinch of turmeric makes that lemon curd sunny yellow.
  • Olive oil — Or you can substitute toasted sesame oil.
  • Ginger — This recipe calls for 2 teaspoons of fresh ginger or you can substitute 1 teaspoon of ground ginger.
  • Broccoli — You’ll need some broccoli florets. Keep them small so they cook quickly.
  • Onion — I used a yellow onion, or you can substitute white or red onion.
  • Bell pepper — I recommend a red bell pepper because of it’s sweet flavor, or you can substitute green bell pepper.
  • Vegan Chicken — To make this recipe fast and easy, you can use Gardein Chick’n Teriyaki Strips. Or you can use Vegan Chicken and add your favorite teriyaki sauce.
  • Frozen shelled edamame
  • Brown rice

How to Make Vegan Teriyaki Bowl

  1. Cook onions and ginger in an oiled skillet until tender.
  2. Add the broccoli, onion, and peppers and cook until the broccoli is tender.
  3. Push the vegetables to the outer edges of the pan, add the vegan chicken pieces in the center and cook them until they’re browned.
  4. Pour in the teriyaki sauce and stir to combine.
  5. Add the cooked veggies and stir to incorporate the sauce.
  6. Serve over rice.

Ingredients

  • 1 tablespoon olive oil
  • 2 teaspoons finely chopped fresh ginger
  • 2 cups broccoli florets
  • 1 cup chopped yellow onion
  • 1 cup red and yellow bell pepper strips
  • 1 package Gardein Chick’n Teriyaki Strips
  • 1 cup frozen shelled edamame
  • 3 cups cooked brown rice*

Instructions

  • In a large skillet over medium heat add the oil. Add ginger and cook for about a minute.
  • Add the broccoli, onion, and peppers. Stir and cook a few minutes, until the broccoli is tender, about 5 minutes.
  • Push the vegetables to the outer edges of the pan, creating space in the middle of the skillet. Add the Gardein Chick'n pieces (not the sauce) to the middle of the skillet. Cook until the chick'n strips are browned. Add the edamame and cook until heated through. Pour in the Teriyaki sauce packet and stir to combine.
  • Add the cooked veggies and stir to incorporate the sauce.
  • Serve over rice.
